Total Time: 20 minutes
- 32 spears asparagus
- 4 medium eggs
- 1 teaspoon butter
- 4 ounces prosciutto
- 1/2 teaspoon unrefined sea salt
1. Prepare a large bowl of ice water. Set aside. Bring a large pot of water to a boil. Place the asparagus in the water until they turn bright green and become slightly tender (cooking time will vary, depending on the thickness of the asparagus). Remove from boiling water with tongs and plunge into ice water. Drain and set aside.
2. Soft boil 4 eggs.
3. When you are ready to assemble the dish, place a skillet over medium high heat, and toss asparagus with a pat of butter until the asparagus is warm. Sprinkle with salt and pepper. Place on a plate and wrap with a slice or two of the prosciutto. Serve with the soft boiled egg on the side.
