Ingredients
- 4 medium beets, peeled and grated
- 2 large carrots, grated
- 2 tablespoons sunflower seeds, soaked overnight
- 1/4 cup pecans, soaked overnight and chopped
- 1 tablespoon fresh ginger, grated
- 1 tablespoon orange zest
- 1 teaspoon whole grain mustard
- 1 tablespoon olive oil
- 1 sea salt and pepper
Directions
Add all ingredients in a medium-sized bowl and toss to combine.
