Bitter Greens Starter Salad

Directions

  1.  Combine all dressing ingredients through the dijon mustard. Slowly whisk in the olive oil. (The dijon mustard acts as an emulsifier so the oil and vinegar don’t separate as easily and also adds flavor.)
  2. Place ½ cup of mixed greens on each plate. Top with green onions, sunflower seeds, salt and pepper. Place ¼ cup sprouts and tomato wedges off to the side of the salad. Serve with balsamic vinaigrette.
