Combine all dressing ingredients through the dijon mustard. Slowly whisk in the olive oil. (The dijon mustard acts as an emulsifier so the oil and vinegar don’t separate as easily and also adds flavor.)
Place ½ cup of mixed greens on each plate. Top with green onions, sunflower seeds, salt and pepper. Place ¼ cup sprouts and tomato wedges off to the side of the salad. Serve with balsamic vinaigrette.
Nothing stimulates the digestive system like bitter greens. Even a few bites of this bitter greens starter salad triggers the release of gastric juices within the stomach, which play a very important role in the breaking down of food for absorption. Bitter greens before meals can ease symptoms of gassiness, bloating and acid reflux, as well as other uncomfortable feelings associated with poor digestion.
