- 1 pound carrots, peeled, cut into 3-inch lengths, quartered lengthwise
- 1 tablespoon honey, raw unfiltered
- 2 tablespoons butter
- 1 tablespoon fresh ginger, finely chopped, peeled
- 1 salt
- 1 ground black pepper
1. Cook carrots in large saucepan of boiling salted water until just tender, about 8 minutes. Drain. Return carrots to same pan and add honey, butter, fresh ginger and simmer over low heat until blended and glaze thickens enough to coat, tossing occasionally, about 5 minutes.
