Directions for Chicken Liver With Swiss Chard And Shiitake Mushrooms
Saute onions and mushrooms in butter over medium heat until just starting to brown. Add liver, salt and pepper to taste and cook 3-5 minutes stirring often to cook evenly. (Most people over cook liver leaving it thick and chewy. Don’t be one of those people.) Add Swiss chard and toss to coat. Cook 1 more minute and serve.
This dish provides a HUGE amount of Vitamin A, Vitamin B12 and Iron! If you are anemic, serve this with some lentils and dark leafy greens and you have a wonderful alternative to those constipating iron pills! This makes a very small portion. It may be doubled or tripled for more people. I created this recipe while I was waiting for my whole chicken to roast. Instead of throwing out the liver, I pulled what I had from the fridge and created this tasty little dish. It was just enough for two people to have a few tasty little bites.
