Coconut Rice Pudding
Total Time: 50 Minutes
- 1/2 cup brown rice, soaked, rinsed, and drained
- 1 cup water
- 1/2 teaspoon cinnamon
- 1 can coconut milk
- 1 teaspoon vanilla extract
1. Place rice and water in a pot and cover with water. Bring rice to boil, turn down heat and simmer 40 minutes or until water is absorbed.
2. Add cinnamon, coconut milk, and vanilla. Simmer 5-10 minutes until almost all liquid is absorbed. Serve with a dusting of cinnamon.
