Gluten-Free Fried Geoduck

Directions

  1. Bring a large pot of water to boil (about 8 quarts). Using a small boning knife, gently pry open shell and cut the meat away from the shell edges. Discard the sack next to the body and the shell. Rinse well under running water.
  1. Cut the neck away from the body of the geoduck and set the neck aside*. Slice the body of the geoduck into strips. Season with salt to taste.
  1. Place the rice flour, eggs, and panko in 3 separate bowls. Dredge the strips one at a time in rice flour, then eggs, then panko. Set breaded geoduck strips on a plate.
  1. In a small saucepan heat ghee over high heat. When a drop of water dances on the oil surface, carefully place the strips in the oil with a long spoon. Cook until golden brown on each side. At this high temperature, you don’t have to fry very long. Drain on paper towels. Enjoy!

Health Benefits

I had really resisted geoduck because when I ate it once before it was very fishy and tasted yucky (technical term there). When my spouse and I caught a geoduck with our own bare hands we knew we had to eat it, but to be honest, we were really dreading it!

I found a YouTube video of how to cook it from season 3 Top Chef Winner, Hung Huynh. When he recommended it as sashimi my heart sank… but the way he moaned over it like it was a sweet delicacy sold me. When I prepared this recipe we were so amazed at how sweet and tender fresh geoduck is. It is absolutely delicious. So thank you Hung Huynh!

Geoduck is protein rich and really supports my theory that food aids the part of the human body that it looks like. For instance, cauliflower looks like brain and is actually nutritious for the brain. The geoduck looks like, well, like the male thingamajig, and is known to be an aphrodisiac that can improve your body’s reproductive function and decrease male impotence. So there you go!

It also helps to maintain a balance between your body’s potassium and sodium levels. This means it can eliminate edema, aid your urinary system to eliminate toxins and excess water, and can even eliminate bloating, strengthen kidneys, and help control blood pressure.

Not bad for something that looks like a one eyed, one eared, flying yellow plankton eater!
