Halibut With Pineapple Papaya Sauce

Directions

  1. Preheat oven to 425 degrees F.
  2. In a small saucepan combine coconut oil and the next 7 ingredients. Sauté until garlic is fragrant and fruit begins to brown and soften. Add orange juice and simmer until reduced to desired thickness. Turn off heat and add butter incorporating it 1 tablespoon at a time.
  3. Melt coconut oil in an oven safe skillet over medium heat, coating the pan well. Using a paper towel, wipe the pan if needed to absorb any excess oil. Place halibut in pan, presentation side down (skin side up), and let it sizzle. Sear until nicely browned. Flip the fillets so that the skin side is down and place in preheated oven for 10 minutes.
  4. Plate fish and drizzle with orange reduction sauce.
