Health Benefits

This salad is packed with vitamin C to bring some sunshine onto the table during a dark winter, and to help stave off nasty winter bugs. Persimmons are loaded with just as much vitamin c as the more widely promoted citrus family. Vitamin c is an antioxidant, which means it protects your cells from free radicals, which can cause visible aging, heart disease and cancer. Vitamin c is also necessary for collagen production, which not only assists in skin health and appearance, but also can help to heal cuts. Persimmon is also loaded with iron and calcium, making it more than a one-hit wonder. In the winter, when the sun isn’t helping us absorb, it’s important to remember to pair up your nutrients to get that maximum absorption, so keep an eye on your vitamin D intake in conjunction with calcium to reap the full benefits of both.
