Garlic Tahini Sauce Ingredients
- 3 cloves garlic
- 1/2 cup
- 1/4 cup
- 1/4 cup water
- to taste unrefined sea salt
Chicken Ingredients
- 6 chicken legs, bone-in
- 2 medium red onions, thinly sliced
- 2 garlic cloves, smashed
- 1 lemon, thinly sliced, seeds removed
- 1 teaspoon allspice, ground
- 1 teaspoon cinnamon, ground
- 1/4 cup olive oil
- to taste unrefined sea salt
- to taste freshly ground black pepper
- 2 tablespoons butter
- 1/4 cup pepitas, (pumpkin seeds)
Directions
- Preheat oven to 425°F.
- Place chicken, onions, garlic, lemon, allspice, cinnamon, and oil in a large bowl. Toss to coat.
- Place chicken mixture on a rimmed baking sheet and roast until chicken is browned and cooked through, 35-40 minutes.
- For sauce— pulse garlic, tahini, lemon juice, and water in a food processor, adding more water if needed, until smooth and creamy. Season with salt to taste.
- Melt butter in a small skillet over medium-high heat. Add pepitas and cook, stirring often, until butter foams, then browns, and nuts begin to brown.
- Serve chicken with roasted onion and lemon, topped with pepitas and garlic tahini sauce.
