Roasted Sweet and Savory Yams with Red Onion & Thyme
Total Time: 45 minutes
- 4 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 red onion, quartered and separated
- 1/4 cup butter, melted
- 1/4 cup dark maple syrup
- 2 teaspoons cinnamon
- 1 tablespoon fresh thyme
- 1 sea salt and pepper
- Preheat oven to 400 degrees F.
- Lay the sweet potatoes and red onion out in a single layer on a roasting tray. Drizzle the butter, maple syrup, cinnamon, thyme, salt and pepper over the potatoes. Roast for 30-40 minutes in oven or until tender, stirring once or twice for even browning.
