Total Time: 10 minutes
- 1 tablespoon flax seed, ground
- 1/2 cup cashews, unsalted
- 1/2 can coconut milk
- 1 banana
- 2 cups spinach, loosely packed
- 3/4 cup pineapple juice
In a blender, combine flax, cashews, and coconut milk on high until smooth (use the fatty part of the coconut milk and the clear part if separated). Add banana, spinach, and pineapple juice and blend until smooth. If you desire an icier smoothie, add 2-3 cubes of ice or frozen green grapes and blend until combined. Enjoy immediately or save in the fridge for a quick snack or lunch!
