Yes, I am feeling a strong sense of presence this holiday season. It could be all the chocolate covered dates or the thought of pumpkin pie, or pecan pie, or perhaps it is meditating on the yam that has me feeling all peaceful and content inside.
I love the holidays. It is a wonderful time to connect with friends and family and enjoy many foods we normally don’t eat during the rest of the year.
This recipe for Roasted Sweet and Savory Yams with Red Onion and Thyme is a very simple, yet elegant dish. If you’ve been following me you know that I adore a sweet and savory combo and this dish is no different. It combines savory thyme and sweet maple syrup with the red onion. Not a typical combination that people would consider adding to a yam dish, but it works really well! Especially if you make sure that the onions get a bit brown and caramelized around the edges. Mmmm!
When you enjoy this dish be sure to repeat the mantra: I Yam That I Yam 🙂
