How It Got Started

Dinosaur Bar-B-Cue began in 1983 when three partners determined that road-tripping bikers deserved quality barbeque at affordable prices. To provide this service, they took to live on the road, setting up shop at motorcycle rallies, festivals, and fairs all across the northeastern United States.

These folks cooked up their mouth-watering fare for five years in a 55-gallon drum cut in half. They served up plates of the finest meats and sides to hungry bikers and motorcycle enthusiasts non-stop.

The Next Phase

But as anyone who has spent a lot of time traveling knows, life on the road can get pretty tough after a while. That’s when the folks behind Dinosaur Bar-B-Cue decided to plant roots in a permanent location. They opened their first restaurant in downtown Syracuse, New York, in 1988.

The place was such a hit that it couldn’t keep up with the demand in its current facility, so just two, short years later, in 1990, it expanded and tripled its size. The new layout would include full-service dining, a full bar, and live music. After that, they would go on to break ground on five more locations:

  • Rochester, NY (1998)
  • Harlem, NY (2004)
  • Troy, NY (2010)
  • Brooklyn, NY (2013)
  • Buffalo, NY (2014)
