This year I was craving a green bean casserole but the nutritionist within me revolted at the thought of canned cream of mushroom soup and processed fried onions. So I decided to mimic an old recipe but with a new healthy twist!
I replaced the cream of mushroom soup with fresh shiitake mushrooms, bone broth, butter and white wine. Doesn’t that just sound SO much tastier?! I also reduced the mixture down to thicken it and concentrate the flavors. Then I roasted the onions in the oven until they reached a delicious salty crispness. It was a serious hit! Check it out!
