Pumpkin Quinoa Breakfast Porridge

Directions

  1. Soak quinoa in water overnight for 12-24 hours. Drain and rinse.
  2. Combine quinoa, cubed pumpkin and water in a medium saucepan and bring it to a boil.
  3. Add cinnamon, ginger, cloves and maple syrup. Reduce heat to a simmer and cook for 10-15 minutes or until pumpkin is soft and mixture thickens.
  4. Garnish with sage leaves and serve hot. Also great topped with unsweetened coconut flakes or chopped walnuts!
