Roasted Sweet Potatoes with Thyme and Maple Syrup
Total Time: 45 minutes
- 4 sweet potatoes, peeled, sliced and cut into wedges
- 1/4 cup olive oil, unrefined extra virgin
- 1/4 cup dark maple syrup
- 2 tablespoons fresh thyme, chopped
- 1 unrefined sea salt
Preheat oven to 375 degrees F.
Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle with olive oil and maple syrup. Sprinkle with thyme and salt. Roast for 25 to 30 minutes in oven or until tender. Garnish with fresh thyme and serve.
