Salad Ingredients
- 8 black radishes
- 1 bunch baby white radishes, quartered
- 1 small daikon radish
- 2 large carrots
- 3 handfuls butter lettuce
- 1 (1.5oz) package radish shoots
Dressing Ingredients
- 2 tablespoons fresh lime juice
- 1 teaspoon
- 1/4 cup olive oil, unrefined extra virgin
- 3 tablespoons rice vinegar
- 1 sea salt and pepper
Directions
1. Combine all dressing ingredients in food processor and blend until smooth.
2. Using a mandolin, slice the black and daikon radishes, and carrots paper thin and place into a large mixing bowl. Quarter the baby white radishes and add the lettuce, pea shoots, and dressing. Toss well. Serve
