For Dressing Ingredients
- 1 tablespoon fresh ginger, peeled and chopped
- 1/4 cup shallot, sliced
- 1/4 cup creamy peanut butter
- 1/2 cup rice vinegar
- 2 tablespoons Bragg's Liquid Aminos
- 1/2 cup sesame oil, unrefined
For Salad Ingredients
- 1 small Napa cabbage, finely shredded
- 1 small daikon radish, cut lengthwise in half and thinly sliced
- 14 radishes, red, sliced
- 4 scallions, thinly sliced
- 1/2 cup dry roasted peanuts, coarsely chopped
Directions
1. Blend ginger, shallot, peanut butter, vinegar, Bragg's sauce, and sesame oil in a blender or food processor until smooth and creamy.
2. Put cabbage, daikon radish, red radishes, scallions, and peanuts in a large serving bowl. Pour in peanut dressing; toss thoroughly to combine.

This is a great spring and summer recipe. I will definitely use the dressing for other salads because it is so good, it really makes it.
